The idea of the menu at Hovs Hallar is always the love of the ingredients.
To utilize what grows around us and follow the times and evolution of the seasons.
That’s why, as much as possible, what we serve is picked up on farms around us and a lot from our new garden on the roof top of the kitchen. Animal agriculture and processing of the meat and future fish stocks are something we always think about when we write our menus.
The menus change when the old one stops growing and the new one comes up.
